I don’t know what you think about when you think summer, but I think salads, poolside chats with the girls, vacations, smoothies, and ice coffees – who am I kidding, I drink ice coffee all year round!
As a mom, I can easily get consumed with making lunch for everyone else but myself. Then I end up snacking on whatever is close by and easily accessible … “coffee cookies”, cheese sticks, veggie straws, a banana; not the worst food but definitely not enough to keep me full until dinner.
I grew jealous of my husbands meaty sandwiches but for me, heat + bread = bloating and I am not interested in that. One day as I was staring longingly into my pantry waiting for the right food to appear, I saw left over soft taco wraps and it got me thinking. I have bacon, tomatoes, lettuce *gasp* a BLT wrap! But then of course the lettuce was rotten so I had to improvise.
Breakfast Wrap Bacon, Turkey, Cheddar, Ranch Wrap
Technically, this post is not a “ingredients/directions” recipe. It is an “idea” for you to help spark some easy meals for yourself and the family.
What did I put in mine?
- Squeeze of Ranch Dressing
- Spinach
- Cheddar Cheese
- Turkey Breast
- Bacon
- Tomato
The next day I made a breakfast wrap for me and my man. You can put whatever you want in it – ham and swiss, an actual BLT, grilled chicken, sausage – I made one a few months ago that was sausage, egg, salsa, and cream cheese, DELICIOUS!
